Saint Flour is a millennial city. Its history began in the IV century with the arrival of the christian evangelist Florus. The fortified episcopal city, trade point between the Auvergne and the Languedoc regions is the historical capital of Haute Auvergne. Its medieval streets bear witness of a pretigious past. 
Behind the superficial austerity of the volcanic stone, we discover a quality built heritage :

- the remains of fortified gates and walls, Saint-Peter's cathedral with its black Christ,
- the former episcopal palace now housing the Museum of the Haute Auvergne,
-the Douët museum (Art and History) in the consular house with its beautiful Renaissance façade (mullioned windows, gargoyles and bow medallions)

Amongst the many local specialities which you will find in the Pays de Saint Flour, the blonde lentils of Saint Flour are truly unique. The Planèze of St Flour has a rich volcanic soil which is ideal for growing lentils.
